Tasty Jam Tarts
These tasty little tarts are perfect to make with your kids over the bank holiday weekend. Fill them with the jam of your choice. Or you can use my homemade raspberry jam or lemon curd.
Method
First make your pastry and rubbing the butter and flour between your fingers until it resembles breadcrumbs.
Mix in the yolk, vanilla and a pinch of salt and bring together with your hands. If it feels too dry you can add a tablespoon of cold water.
Once you have bought this together wrap in cling film and put it in the fridge for at least 30 minutes.
Pre-heat your oven to 180C
Once the 30 minutes is up, roll your pastry out on a work surface until it is about half a centimetre thick. Use a large pastry cutter to cut out 12 round tarts
Grease a tart tin (you can use melted butter, but I think spray oil is perfect for this as it cover the tin so easily). Gently place your circles of pastry into each hole.
Add a heaped tablespoon of jam into each tart.
Put the tarts into your oven for 20 minutes, or until the pastry is golden brown.

150g plain flour
75g cold unsalted butter
1/2 tsp vanilla extract
1 egg yolks
pinch of salt
12 tablespoons jam
You will also need a mini tart tin
